Ingredients:
For the Marinade:
- 2 pounds pork shoulder or pork loin, cut into large chunks
- 4-6 Scotch bonnet peppers, seeds removed for less heat
- 1 large onion, chopped
- 4-5 cloves garlic, minced
- 3-4 stalks green onions, chopped
- 1 tablespoon fresh thyme leaves
- 1 tablespoon ground allspice
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon ground ginger
- 2 teaspoons brown sugar
- 1/4 cup soy sauce
- 1/4 cup vegetable oil
- 1/4 cup lime juice
- 1/4 cup white vinegar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
For Cooking:
- Pimento wood (optional, for authentic flavor)
- 1/4 cup vegetable oil for grilling
Instructions:
- Prepare the Marinade:
- In a blender or food processor, combine the Scotch bonnet peppers, onion, garlic, green onions, thyme, allspice, cinnamon, nutmeg, ginger, brown sugar, soy sauce, vegetable oil, lime juice, white vinegar, salt, and black pepper. Blend until smooth.
- Marinate the Pork:
- Place the pork chunks in a large bowl or zip-lock bag. Pour the marinade over the pork, ensuring all pieces are well coated. Cover the bowl with plastic wrap or seal the bag and refrigerate for at least 8 hours, preferably overnight for the best flavor.
- Prepare the Grill:
- If using pimento wood, soak it in water for about an hour before grilling.
- Preheat the grill to medium-high heat. If using a charcoal grill, arrange the coals on one side to create a direct and indirect heat zone.
- Grill the Pork:
- Remove the pork from the marinade and let any excess drip off. Discard the remaining marinade.
- Brush the grill grates with vegetable oil to prevent sticking.
- Place the pork on the grill over direct heat. If using pimento wood, place the soaked wood chips on the coals.
- Grill the pork for about 4-5 minutes per side, or until nicely charred. Move the pork to indirect heat, cover the grill, and cook for an additional 20-30 minutes, turning occasionally, until the internal temperature reaches 145°F (63°C).
- Serve:
- Remove the pork from the grill and let it rest for about 10 minutes before slicing.
