News Americas, MONTEVIDEO, Uruguay, Fri. Jan. 20, 2012: It’s very interesting that the European cultures of Spain, Italy, Portugal and France, essentially influence the cuisine of the South American nation of Uruguay.

One of the most widely eaten dishes by the locals is Puchero, which consist of meat, carrots, onion, green beans, corn, squash, celery, potatoes, zucchini, corn, parsley, water and salt to taste. Give it a shot in your kitchen as it’s a great winter dish.
Ingredients

• Water
• Veal Shanks
• Carrots
• Onion
• Green Beans
• Husked Sweet Corn
• Squash
• White Potatoes
• Six Zucchini
• Parsley
• Salt

Preparation:
• Fill a large saucepan with water and set on the stove to boil.
• Add to the boiling water, meat, carrots, onion, green beans, corn, squash, and celery.
• Then add the potatoes, zucchini and corn.
• Season by adding the parsley and salt to taste.
• Simmer for about 30 minutes.
• Drain off most of the liquid.
• Serve the meat and vegetable in bowls with some of the remaining broth.
Mustard, mayonnaise, tomato, onion, or pepper sauce may be added to the finished bowl of Puchero.
