News Americas, NEW YORK, NY, Fri. Sept. 22, 2017: It been a rough few weeks for the Caribbean and it’s Diaspora ! The devastation of hurricanes Harvey in Texas and Irma and Maria in Caribbean have hit close to home, destroying lives and property.
Individually and collectively we all have to make meaningful contributions to help restore lives property and restore the Caribbean spirits.
Today given the state of the region, cooking is difficult, so basic foods will have to suffice. So to do this we resort to Hurricane, rainy weather foods. An example of this is Canned corn-beef and flour dumplings.
Corned Beef
Ingredients
I can of Corned Beef
1 medium Onion
2 cloves garlic
2 medium Tomatoes
1 tsp black Pepper
1/4 cup ketchup
1 tbsp coconut oily
3 cups flour
Salt
Method
In a medium size Dutch pot, sauté onions, tomatoes and garlic.
Add corned beef.
Crush until flatten and add ketchup.
Simmer until completely heated.
Add black pepper.
Make flour dumplings by kneading flour and cornmeal in a bowl and make into small round balls and then flattening in your palm and add to the same pot.
Add salt to taste.
Boil until cooked through.
Cook until done.
Serve dumplings with corned beef!
