News Americas, NEW YORK, NY:  This week we make a culinary trip to the island of Dominica and bring you the recipe for Banana Crunch Cake. Here’s what you will need to make it.

INGREDIENTS

  • 6 oz butter
  • 6 oz castor sugar
  • 3 eggs finely grated rind and
  • juice of 1 lime
  • 1 cup crushed roasted peanuts
  • Pinch of salt
  • 4 oz plain flour
  • 4 oz self-rising flour
  • 3 ripe bananas
  • 1 tsp vanilla & almond essence
  • 1 tsp grated cinnamon and nutmeg
  • 1 cup Milk
  • A handful of pineapple pieces and cheery pieces
  • a handful of desiccated coconut

METHOD

  • Pre-heat oven to 360 degrees.
  • Lightly grease a 21b loaf tin, placing parchment paper at the bottom.
  • Beat butter until soft, then add sugar and fold it in.
  • Beat in eggs one at a time, stir in lime juice and lime rind.
  • Mash bananas with a fork and fold into mixture.
  • Add cinnamon, nutmeg, and both essences.
  • Sift the flours and salt into mixture, fold in carefully.
  • Add the crushed peanuts, coconut, pineapple and cherry pieces.
  • Add one cup of evaporated milk or pasteurized semi skimmed milk and fold all together for 2 mins.
  • Spoon mixture into loaf tin.
  • Sprinkle some coconut on top, then bake in center of oven for 1 hour 10 mins.
