News Americas, NEW YORK, NY: This week we make a culinary trip to the island of Dominica and bring you the recipe for Banana Crunch Cake. Here’s what you will need to make it.
INGREDIENTS
- 6 oz butter
- 6 oz castor sugar
- 3 eggs finely grated rind and
- juice of 1 lime
- 1 cup crushed roasted peanuts
- Pinch of salt
- 4 oz plain flour
- 4 oz self-rising flour
- 3 ripe bananas
- 1 tsp vanilla & almond essence
- 1 tsp grated cinnamon and nutmeg
- 1 cup Milk
- A handful of pineapple pieces and cheery pieces
- a handful of desiccated coconut
METHOD
- Pre-heat oven to 360 degrees.
- Lightly grease a 21b loaf tin, placing parchment paper at the bottom.
- Beat butter until soft, then add sugar and fold it in.
- Beat in eggs one at a time, stir in lime juice and lime rind.
- Mash bananas with a fork and fold into mixture.
- Add cinnamon, nutmeg, and both essences.
- Sift the flours and salt into mixture, fold in carefully.
- Add the crushed peanuts, coconut, pineapple and cherry pieces.
- Add one cup of evaporated milk or pasteurized semi skimmed milk and fold all together for 2 mins.
- Spoon mixture into loaf tin.
- Sprinkle some coconut on top, then bake in center of oven for 1 hour 10 mins.
