News Americas, MIAMI, FL, Fri. April 13, 2018: A healthy, cost effective and delicious Caribbean side dish that is served with a protein and salad in many households is the famous Callaloo Rice. Callaloo is a popular Caribbean dish originating in West Africa served in different variants across the Caribbean. The main ingredient is a leaf vegetable, traditionally either amaranth, taro or xanthosoma. But you can also substitute spinach in this recipe from Grace Foods.

INGREDIENTS
1 ounce Butter, unsalted
2 ounces onion
1 ounce garlic, chopped
1 ounce scallion, chopped
1 teaspoon thyme
1 teaspoon pimento
1 teaspoon scotch bonnet pepper
4 ounces Callaloo or Spinach chopped
1 pound Parboiled Rice
3 cups water
1 teaspoon salt
1/2 teaspoon black pepper
1-ounce granulated sugar
2 floz Coconut Milk
METHOD
In a pot over a low flame, melt butter and sauté onion, garlic, scallion, thyme, pimento and hot pepper for 2 minutes.
Add callaloo and continue to cook for another 5 minutes.
Wash rice and place in the pot with just enough water to come 1 1/2 inches above the rice.
Season pot with salt, black pepper, sugar, and coconut milk. Rice must not be steamed over a medium flame.
When liquid comes to a boil, reduce the flame to very low, cover pot with cling wrap and allow to steam. Steam until the grains have swollen and burst.
