Aug. 16, 2019: This week’s Caribbean recipe is mostly known in Guyana and Trinidadian cooking where fish curry or curry fish is a delicacy and just about any fish can be curried. INGREDIENTS
- 3 lbs. fish (you can use any fish) cut into medium pieces
- 2 tbsp Vinegar
- 1 tbsp White Rum
- Juice of 2 limes
- 3 tsp salt
- 3 tbsp green seasoning
- 1 tbsp green seasoning mix
- About 3 cups water (more may be needed)
- Flour
Curry
- 2 tbsp curry powder
- 1/2 tsp cumin
- ½ tsp garam masala
- 1 tsp turmeric
- ½ Cup water
- 2 tsp tomato paste
- 1 tomato quartered
- 1 green mango
- 6 fresh whole okras.
- Green Seasoning
- 12 sprigs thyme, leaves removed from stems
- Handful of cilantro (roughly chopped for 1/3 cup)
- 3 cloves garlic
- ½ wiri-wiri pepper
- 3 whole scallions cut into 1-inch pieces
