INGREDIENTS

3 lbs. fish (you can use any fish) cut into medium pieces

2 tbsp Vinegar

1 tbsp White Rum

Juice of 2 limes

3 tsp salt

3 tbsp green seasoning

1 tbsp green seasoning mix

About 3 cups water (more may be needed)

Flour

Curry

2 tbsp curry powder

1/2 tsp cumin

½ tsp garam masala

1 tsp turmeric

½ Cup water

2 tsp tomato paste

1 tomato quartered

1 green mango

6 fresh whole okras.

Green Seasoning

12 sprigs thyme, leaves removed from stems

Handful of cilantro (roughly chopped for 1/3 cup)

3 cloves garlic

½ wiri-wiri pepper

3 whole scallions cut into 1-inch pieces
