INGREDIENTS

1 Side of Salmon (skinned and cut into bite sized pieces)

2 tbsp Vinegar

1 tbsp White Rum

Juice of 2 Limes

3 tsp Salt

4 tablespoon Olive Oil

1/3 cup water

2 tablespoons Coconut Milk

2 Tbsp Curry Powder

1/2 Tsp Cumin

½ Tsp Garam Masala

1 Tsp Turmeric

2 Tsp Tomato Paste

Half an Onion chopped

2 Sprigs of thyme with leaves removed from stems

3 Cloves Garlic peeled and chopped

2 pieces of Ginger

½ a Scotch Bonnet Pepper chopped
