The term foo-foo refers to any root vegetable that has been boiled, mashed and formed into balls. Here’s a recipe with plantain as is done in Guyana and Jamaica.
INGREDIENTS
- 3 Green Plantains
- 1 Ripe but Firm Plantain
- 2 Tablespoons Butter
- Salt and Pepper to taste

Mortar and Pestle
METHOD

- Boil plantains.
- When soft, pound them in a large mortar.
- Dip pestle in cold water in between pounding to prevent sticking.
- When smooth, mix with butter, salt and pepper.
- Form into balls and serve warm with a stew or in a soup as its served in Guyana.
