News Americas, NEW YORK, NY, Fri.  May 31, 2019: This week’s Caribbean recipe comes from the French Caribbean island of Guadeloupe and it’s called Poulet Boucané or simply, Smoked Chicken. Here’s what you will need to make it.

INGREDIENTS

1 chicken (cut into pieces)

6 pressed garlic cloves

3 sliced onions

2 sliced shallots

1 chopped pepper

1 Lime

½ a cup of vinegar

1 Lemon

Black Pepper to taste

Salt to taste

Chives

Parsley

1 teaspoon of brown sugar (optional)

METHOD

Cut chicken into grilling pieces.

Wash the chicken in vinegar and lime juice.

Mix together pepper, some of the garlic, chopped onions, scallion, salt and black pepper along with brown sugar and marinate the chicken in for at least 12 hours.

On day of cooking, heat the embers of the grill.

Arrange chicken pieces on top, saving the marinade.

Regularly soak with the marinade until chicken is cooked through.

Make a sauce with chive, the remaining garlic, parsley, lemon juice, oil, water and salt and pepper to taste.

Serve with chicken.

If you do not have a barbecue, bake it with the marinade.
