News Americas, NEW YORK, NY, Fri. Sept. 27, 2019:  This week, we bring you a rice dish from the Caribbean that is unlike the widely known rice and peas or peas and rice. It’s Saltfish and Pumpkin Rice. Here’s how to make it.

INGREDIENTS

2 cups uncooked white rice

½-lb. Cod fish/salt fish

½- lb. diced pumpkin

1 medium onion (chopped)

1 can of coconut milk

2 cups water

Salt (to taste)

Black pepper

A sprig of thyme

2 stalk scallions, chopped

2 -3 tbsp butter or margarine

1 Scotch Bonnet or Habanero Pepper

METHOD

Soak or boil the Cod fish/salt fish to remove most of the salt, discarding the water.

Wash rice.

Add to a pot along with a can of coconut milk along with other ingredients – onion, scallion, pepper, butter and seasoning.

Add additional water to cover the rice.

Bring to a boil and then cook on low heat and add pumpkin.

Cook until saltfish is cooked and broken into bits, pumpkin is cooked and rice is cooked through but is loose.

Taste to ensure that the rice is seasoned well. Serve hot.
